The beauty of each little salted caramel is the creamy dreamy texture and taste that comes from ultra silky California dairy and caramelized sugar.

I love using California-made dairy products, because California has such high standards for their dairy industry, that they produce meticulously consistent dairy products. I know when I buy cheeses, milk, cream, and butter with the Real California Milk seal, I’m buying quality.

Instructions

  • Place the sugars, heavy cream, butter, corn syrup and bourbon in a large sauce pot. Attach a candy thermometer to the edge of the pot with the tip touching the ingredients, then place over medium heat.

  • Bring to a boil, stirring occasionally, then reduce the heat to medium-low. Allow the mixture to simmer until it reaches 245-260 degrees F andis the desired color you like for caramel. If the temperature starts rising faster than the caramel is browning, lower the heat even more to give it time to caramelize.

  • Meanwhile, line a 9×13-inch baking dish with parchment paper and cut the corners so it folds into the dish neatly. Spray the parchment with non-stick cooking spray. Then prepare a cup of ice water to test the caramel. Once the caramel reaches at least 245 degrees F, use a spoon to drop a little bit of molten caramel into the ice water. Lift it out and test for texture. It should be firm enough to cut, yet soft enough to chew. If needed, simmer the caramel a little longer, but do not allow it to go over 260 degrees F. Once it's ready, stir in the vanilla extract.

  • Carefully pour the molten caramel into the prepared dish and allow it to cool completely. You can speed up the cooling process by placing the dish in the refrigerator. Once cooled, lift the whole sheet of caramel candy out of the dish by the edges of the parchment paper and cut into 1-inch squares. Sprinkle generously with sea salt, then wrap each candy in small pieces of wax paper.

FAQs

How to melt hard caramel candies? ›

Instructions. Melt Werther's Original Caramels with half and half, salt and vanilla in medium saucepan over medium heat until smooth, stirring occasionally. Serve immediately with assorted fruit, cookie, pretzels, marshmallows, nuts or cubed pound cake.

What temperature is hard caramel candy done? ›

250°-265°F

Why does caramel sauce get hard? ›

The water evaporates, leaving sugar crystals behind. If even one sugar crystal falls back into the pan of cooking caramel, it starts a chain reaction of sugar crystals and the entire pan will harden. The result? Gross, grainy caramel that is unusable in most recipes.

Can you melt caramel squares? ›

Caramel squares melt quickly for use as a dip or topping. The caramels come individually wrapped in the package, so you can use as many squares as you need while leaving the rest wrapped for later use. Melted caramel sauce provides the traditional coating for candy apples.

Can you melt down Werther's hard caramels? ›

Yes, anyone can melt Werther's Original hard candy. Werther's Original is a popular brand of caramel candies, and they can be melted to create a delicious caramel sauce or used in various recipes.

What temperature do you add flavor to hard candy? ›

Cook, stirring, over medium heat until sugar dissolves, then bring to a boil. Without stirring, heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from the heat and stir in flavored extract and food coloring.

Why are my homemade caramels hard? ›

This is usually caused by sugar crystals stuck to the side of the pan that didn't get fully dissolved. It only takes one to set off a chain reaction, and before you know it you have crunchy caramel.

How do you know when hard candy is done? ›

If the candy forms a firm but not hard ball, it is in the firm ball stage. The temperature of this stage is between 242—248°F. Caramels are cooked to the firm ball stage. If the candy forms thick threads when it drips from the spoon, it is in the hard ball stage or 250°—265°F.

Why add butter to caramel? ›

Some form of dairy — typically butter and/or heavy cream — is usually added to the mixture at either the beginning or the end of cooking. This addition makes the caramel richer, thicker, and lighter in color, lending more viscosity and rounder flavor.

How to harden caramel sauce? ›

After the caramel cools down, pour it into a glass jar or container. Refrigerate for up to 1 month. The caramel solidifies as it cools, but you can reheat in the microwave or on the stove so it's liquid again.

How to melt Werther's? ›

Place Werther's Original Soft Caramels and milk in a 1-quart microwave-safe bowl. Microwave on high, stirring frequently until smooth, about 2 minutes. For best results, let melted caramel cool for a few seconds before dipping. Dip apples in melted caramel mixture using a spoon to cover.

Can I melt caramels with milk? ›

To melt caramels using a microwave, open up a bag of soft caramels, unwrap the individual candies, and place them in a microwave-safe dish. Next, add milk to the bowl, or if you'd like a richer treat, add heavy cream instead. Then, place the bowl in the microwave and heat the caramels on HIGH for 1 minute.

How do you keep caramel soft after melting? ›

If the temperature gets too hot and the caramel becomes too hard as it cools, you can put it back in the pan with a couple of tablespoons of cold water to try and save it.

Can you melt hard caramel in the microwave? ›

Combine caramels and water in a microwave-safe bowl. Microwave mixture in 30-second increments, stirring between each increment, until caramels begin to melt, about 1 to 1 1/2 minutes.

How do you dissolve hard candy quickly? ›

Adding heat means adding energy—and for most solids the hotter the water, the easier and faster it is to dissolve the solid. Heated molecules move around more so the dissolved substance will disperse more quickly than in unheated water.
